Classic Spaghetti Aglio e Olio

Ingredients

  • 200 g (7 oz) spaghetti
    -4 cloves,ly
  • 1/4 cup-virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Fresh parsley, chopped, for garnish
  • Gr Parmesan or Pecino cheese (optional)

Instructions

1 Bring large of salted water a boil. Add spaghetti and cook to package directions al dente.

2. While the pasta cooks, olive oil in a skillet medium-low. sliced garlic and sauté until just golden and fragrant being careful not to burn.

3. If using, stir in red pepper flakes and cook for another 30 seconds.

4. Reserve 1/2 cup of pasta cooking water, then drain spaghetti.

5. Add hot to the skillet with the garlic oil Toss to coat, adding water a little at a time to create a glossy sauce6. Season with salt to taste. from heat, stir in chopped parsley7. Serve immediately with grated cheese if desired### Variations- For a lemony note, add a teaspoon of lemon zest at the end.

Add cooked shrimp or anchovy fil for protein boost.

  • Mix in sautéed mushrooms cherry tomatoes for extra color and flavor.

Tips

  • Use-quality extra-virgin olive oil for the best flavor.
  • Keep an eye on the garlic; burning it will introduce a bitter taste.
  • The reserved pasta water helps emulsify the sauce and to pasta.
