A bright, zesty garlic pasta that comes together under 20 minutes. Perfect for a quick weeknight dinner or a satisfying lunch with flexible add-ins.

Ingredients

  • oz spaghetti or your favorite
  • 2 tablespoons oil
  • 4 garlic cloves finely minced
  • 1 lemonzest and juice)
  • 1/2 cup reserved pasta
  • 1/4 cup grated Parmesan cheese
  • Salt freshly ground black, to taste
  • 1/4 teaspoon red flakesoptional)
  • 2 tablespoons chopped fresh parsley (optional)
  • Optional additions: sautéed mushrooms, cherry, spinach
  1. Bring a large pot salted water to boil. Cook according to package until dente. 1/2 cup of the pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. the minced garlic sauté for –2 minutes until fragrant being careful not to let it burn.
  3. Add lemon zest and juice the skillet. Stir to combine and simmer for minute4 Reduce heat to low and add the cooked pasta to the skillet. Pour in the reserved pasta water a little at a, tossing to create a light sauce.
  4. Stir in Parmesan cheese,, pepper, and red flakes (if using). Toss until the pasta is well coated.
  5. Remove from. Mix in chopped parsley and any optional add-ins you prefer.
  6. Serve immediately with extra Parmesan on side.

Tips

  • For a richer, finish the dish with a knob of butter stirred in at the end.
  • If sauce seems dry, splash a bit more pasta water or a small amount of olive oil.
  • Experiment with herbs such as basil or thyme to vary the aroma.

Variations

  • Protein boost: add grilled chicken, shrimp, orfirm tofu.
    Veg boost: fold spinach roasted cherry tomatoes just before.
  • Cream version whisk a of cream or a dollop of mascarpone for a velvety finish.
