Classicy Garlic Pasta- Servings: 4

Ingredients

  • 400 g spaghetti
  • 2 tbsp olive
  • cloves garlic, minced
    cup heavy cream-1/2 cup freshly grated Parmesan cheese
  • Salt black pepper, to taste
  • parsley, choppedoptional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente, according to package instructions.
  2. While the pasta cooks, heat olive in a skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn.
  3. Pour in the heavy cream. Simmer for 3– minutes, allowing the sauce to thicken slightly.
  4. Reserve a cup of pasta water, drain the spaghetti. Add the pasta to the skillet, to with the sauce. Stir in Parmesan cheese and a splash of reserved pasta water if needed reach desired consistency. Season salt and pepper to taste.
  5. Garnish with chopped parsley if using and serve immediately.

Tips

  • Use the reserved pasta to adjust sauce thickness and help it to the noodles.
  • For a lighter version substitute half and half for part of the cream.
  • cooked, shrimp, or sautéed mushrooms variation.
