Tomato Garlic Pasta

A simple, flavorful pasta with vibrant tomatoes, garlic, and fresh herbs. Quick to prepare and perfect for a weeknight.

Ingredients

  • 12 oz (340 g) spaghetti or your favorite pasta
  • 2 tablespoons olive oil
  • 4 garlic, minced
  • 1 small shallot, finely chopped (optional)
  • 1 (28 oz / 800 g) can crushed tomatoes or 2 cups fresh cherry tomatoes,ved
  • 1/4 teaspoon red pepper flakes (optional, adjust taste)
  • Salt and freshly ground black pepper to taste
  • teaspoon sugar (optional, balances acidity)
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup Parmesan or Pecorino, plus more for serving

Instructions

  1. Bring a pot of salted water to a boil Cook the pasta to package directions until alente. Reserve12 cup of the pasta water, drain.
  2. While the pasta cooks, olive in large skillet over medium heat Add garlic (and shallot, if using) and sauté for 1–2 minutes until fragrant and just beginning to soften.
  3. Add crushed tomatoes (or halved cherry tomatoes to the skillet. Stir in red pepper flakes (if using).mer for –8 minutes, until the sauce thickens slightly. with salt, pepper, and sugar if desired.
    4 Toss the pasta into the sauce, a splash of the reserved pasta water loosen needed. Mix until evenly.
  4. Remove from. Stir in fresh basil parsley, and grated cheese. Adjust seasoning to taste.
  5. Serve immediately with extra on.

Variations

  • Add grilled, shrimp, or sautéed mushrooms for more protein.
  • Swap fresh basil for a pinch of oregano or thyme for a different aromatic profile.
  • For a sauce, finish with a of cream or a knob of butter.
  • Use high-quality canned tomatoes or ripe fresh tomatoes for the best flavor.
  • Reserve pasta water; its starch helps the sauce cling to the pasta.
  • Fresh brighten the dish add them at the end to preserve their flavor
