Classic Lemon Garlic Roast Chicken### Ingredients

  • 1 whole chicken (3–4 pounds giblets removed- 2 lemons, quartered
    -6 garlic cloves smashed
  • 2 olive oil
  • 1 teaspoon sea salt
    -1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 1 tablespoon fresh leaves)
    -1/2 cup chicken or water
  • Optional: fresh herbs (semary or parsley for garnish

Directions

  1. Preheat the to 425°F (220°C Place a rack in the of the oven.
  2. Pat the chicken dry with paper towels. Gently loosen the skin the breast and thighs.
  3. Rub the outside of the chicken olive oil, salt, pepper, and thyme. Stuff the cavity with lemon and a few garlic cloves.
  4. Tuck the remaining garlic cloves around the chicken in the roasting pan. Add broth or to the pan.
  5. Roast 60–75 minutes, or until the internal temperature reaches165°F (74°C) in the thickest part of the thigh and the juices run clear.
  6. Remove from the oven and tent loosely with foil Let rest 10–15 minutes before carving.
    7 Slice and serve with pan juices spooned over chicken. Garnish with fresh herbs desired.

Tips

  • If skin browns too quickly loosely tent with foil halfway through roasting- For extra crispy skin, finish under the broiler 2– minutes, watching to burning.
  • Use the pan drippings to make a gravy: simmer with a splash of white wine or additional, then thicken with a slurry cornstarch and water.
