Recipe: Lemon Pasta

Ingredients

  • 200 g spaghetti
  • 2 tbsp olive
    3 garlic cloves, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup grated cheese
  • Salt and black pepper, to taste
  • Optional: crushed red pepper flakes
  • Optional garnish: chopped fresh parsley

Instructions

  1. Bring pot of salted water to boil and cook the spaghetti until al dente. Reserve1/2 cup cooking water, then drain.
    2 While the pasta, heat olive oil in a skillet medium. minced and sauté 30–60 seconds until fragrant, being careful not to burn.
  2. Add lemon zest and lemon juice to the skillet, then from heat.
  3. Return the drained pasta to the pot or transfer to the skillet. Add Parmesan cheese and a of the reserved pasta water. Toss to combine, creating a light sauce.

Tips

  • Use fresh lemon juice for a brighter flavor.
