Ingredients

  • 12 oz (340 g) spaghetti- 3 tablespoons extra-virgin olive
  • 4 garlic, finely minced
  • Zest of 1 lemon
  • 2 fresh lemon juice
  • 1/2 cup grated cheese
  • 1/4 cup pasta cooking water (reserved)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes
    Optional: 2 tablespoons fresh parsley

Instructions

  1. Bring large of salted water to a boil. Add spaghetti and cook until al dente, reserving 1/4 cup of the cooking water draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30–45 seconds until fragrant, being not to brown it.
  3. Add lemon zest and lemon juice to the skillet. Stir to combine and cook for 1 minute to infuse the flavors4. Reduce the heat to low.
