Lemon Garlic Pasta

- 200 g spaghetti
- cloves garlic, minced
- 2 tablespoons olive oil
-est and juice of lemon - and pepper to
- Fresh parsley, chopped
- Optional: chili flakes, grated parmesan
Instructions
1 Bring a pot of salted water to boil cook the spaghetti until al dente.
2. While pasta cooks, heat olive oil in skillet over medium heat. Add minced garlic and sauté until, about 1 minute—do not brown.
3. Add lemon zest and lemon to the skillet. Stir to combine.
4 Reserve 1/2 of the pasta water, drain the pasta add it to the skillet. Toss to coat, adding the reserved water a little at time to create a light sauce.
5. Season with salt and. Stir in chopped parsley. If, sprinkle chili and grated parmesan before serving.
Tips
- For a richer flavor, finish with a small knob of butter off heat.
- Experiment with basil or arugula for a different green note.
