Lemon Chicken with Ro Vegetables

Ingredients
- 4 bone, skin-on chicken thighs
- 1 lemon (zest and juice-4 garlic minced
- 2 tbsp olive oil
- tsp dried oregano- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black to taste
- 2 baby potatoes, halved
- 1 cherry tomatoes
- 1 cup broccoli flore
- Optional: fresh parsley for garnish
Instructions
- Pre the oven to 425°F (220°C).
- In a small bowl, combine zest, lemon juice, minced garlic, olive oil,, thyme, paprika, salt, and pepper3. Place chicken thighs in a large baking. Pour the lemon-garlic mixture over the chicken, turning to coat.
