Lemon Chicken with Ro Vegetables

Ingredients

  • 4 bone, skin-on chicken thighs
  • 1 lemon (zest and juice-4 garlic minced
  • 2 tbsp olive oil
  • tsp dried oregano- 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black to taste
  • 2 baby potatoes, halved
  • 1 cherry tomatoes
  • 1 cup broccoli flore
  • Optional: fresh parsley for garnish

Instructions

  1. Pre the oven to 425°F (220°C).
  2. In a small bowl, combine zest, lemon juice, minced garlic, olive oil,, thyme, paprika, salt, and pepper3. Place chicken thighs in a large baking. Pour the lemon-garlic mixture over the chicken, turning to coat.

Tips

For prep use boneless, skinless thighs; adjust time prevent dryness.
