Lemon Garlic Chicken with Roasted Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
    2 tablespoons olive oil
  • 4 cloves garlic, minced
    -est and juice of 1 lemon
  • 1 teaspoon dried
  • 1 teaspoon dried thyme
  • Salt and to taste
  • 2 cups baby potatoes, hal
    1 cup carrot sticks
  • 1 cup broccoli florets

Instructions

1.heat oven to 425°F (220°C).

2. Toss potatoes, carrots, and broccoli with 1 tablespoon olive oil, salt, and pepper. Arrange on parchment baking.

Tips
