Classic Garlic Lemon Roasted Chicken

Ingredients
- 4 bone-in, skin-on chicken thighs (or 2 pounds chicken pieces)
- 4 cloves garlic, minced
-1 lemon, zested juiced - 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black
- 1/4 cup chicken broth water
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the to 425Β°F (Β°C). Line a baking sheet or shallow pan with parchment for easier cleanup.
- a small bowl, whisk together garlic, lemon zest, lemon juice, olive, oregano, thyme, paprika, salt, pepper.
- Pat the chicken dry with paper towels. Rub the lemon-garlic mixture evenly over the chicken, under the skin possible for extra flavor.
- Arrange the chicken on the prepared pan, skin side up. Pour the broth around the chicken keep the pan moist and help create a light sauce.
- Roast for 35β45 minutes, or until the skin is crispy and the internal temperature reaches 165Β°F (74Β°C). If you prefer crisper skin, broil for the last β3 minutes, watching closely.
- Remove from the oven and let rest for 5 minutes. Spoon any pan juices over the chicken.
- Garnish with fresh parsley and serve.
Tips- For even more flavor, mar the chicken for 2β4 in refrigerator, then proceed with the recipe- Add a handful of cherry tomatoes or quartered potatoes to the pan for complete one-pan meal.
If youβre using boneless, skinless chicken, reduce cooking time to 25β30 minutes and check for doneness with a meat thermometer.
