Classic Lemon Garlic

Ingredients

  • 12 (340 g) spaghetti or linguine
  • tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
    1/2 cup squeezed lemon juice (about 2 lemons)
  • 1/2 cup unsalted grated Parmesan cheese
  • 2 tablespoons uns butter-, to taste-ly ground black pepper, taste- 1/4 cup chopped fresh parsley
  • Optional: extra grated Parmesan for serving

Instructions

  1. Bring a large pot of water to a boil. Cook pasta according to package directions until al dente Reserve 1/2 cup of pasta water, then drain.
  2. a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; 1– minutes fragrant, being careful not to burn the garlic.
    3 Add lemon zest and lemon juice to the skillet Stir to combine and simmer for 1 minute.
  3. Reduce heat to low. Return the pasta to the pot or skillet. Add butter Parmesan, and a splash the pasta water. Toss until the sauce is creamy coats the pasta adding pasta water as to reach desired consistency.
  4. Season with salt and pepper to taste. Stir in chopped parsley6. Serve immediately with extra Parmesan top if desired.

Tips

For richer, substitute half the lemon juice with white.

  • Add grilled shrimp or chicken to turn into a heartier dish.
  • Use freshly torn parsley for brighter color and flavor.
