Classic Lemon Garlic

Ingredients
- 12 (340 g) spaghetti or linguine
- tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Zest of 1 lemon
1/2 cup squeezed lemon juice (about 2 lemons) - 1/2 cup unsalted grated Parmesan cheese
- 2 tablespoons uns butter-, to taste-ly ground black pepper, taste- 1/4 cup chopped fresh parsley
- Optional: extra grated Parmesan for serving
Instructions
- Bring a large pot of water to a boil. Cook pasta according to package directions until al dente Reserve 1/2 cup of pasta water, then drain.
- a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; 1– minutes fragrant, being careful not to burn the garlic.
3 Add lemon zest and lemon juice to the skillet Stir to combine and simmer for 1 minute. - Reduce heat to low. Return the pasta to the pot or skillet. Add butter Parmesan, and a splash the pasta water. Toss until the sauce is creamy coats the pasta adding pasta water as to reach desired consistency.
- Season with salt and pepper to taste. Stir in chopped parsley6. Serve immediately with extra Parmesan top if desired.
Tips
For richer, substitute half the lemon juice with white.
- Add grilled shrimp or chicken to turn into a heartier dish.
- Use freshly torn parsley for brighter color and flavor.
