Lemon Garlic Pasta with Shrimp
A quick, bright pasta dish perfect for weeknights.
Ingredients- 8 spaghetti- 2 olive oil
- cloves garlic, minced
- 1/4 tsp pepper flakes
- 1/2 lb shrimp, peeled and deveined
- Salt and
- Zest of 1 lemon
- 2 tbsp lemon juice-1/4 cup grated Parmesan
- 2 tbsp chopped parsley
. pasta in salted water until al dente. Reserve 1/ cup pasta water2. In a skillet, heat oil over medium. Sauté garlic and red pepper flakes 1-2 min.
3. Add shrimp; cook 23 minutes until. with salt and pepper.
4. Add lemon juice, zest, pasta Toss pasta water to emulsify.
5. Stir Parmesan and parsley. Serve immediately.
Tips
- For a dairy-free version, omit Parmesan and add nutritional yeast.
- Add steamed broccoli for extra greens.
