Spaghetti Aglio e Olio
A classic rápido y delicioso dish garlic olive oil, and a hint of chili.
Ingredients
- 400 g spaghetti- 6 cloves garlic thin sliced
- 120 ml extra-virgin olive oil
- 1– tsp red pepper flakes
- Salt, to taste
- Fresh parsley,
Lemon zest (optional) - Grated Parmesan or Pecorino (optional)
Instructions
- Bring a large pot of salted to a boil. Add spaghetti and cook until al dente, following package instructions.
- While the pasta cooks warm olive oil in a skillet over medium heat. Add slices and sauté gently until golden and, taking care not to burn.
- Stir in red pepper flakes and cook for 30 seconds release the spice.
- Reserve about 1 cup of pasta water, then drain the spaghetti.
- Add the hot pasta to the skillet with the oil. Toss coat adding reserved pasta a at a time to create a lightulsion.
- Season with salt, stir in chopped parsley, and finish with lemon zest if desired. with grated cheese if you like.
Tips
- Control garlic color carefully to prevent bitterness.
- Use high-quality extra-virgin olive oil for the flavor.
- The reserved pasta water emulsify the sauce and cling to the noodles.
