Spaghetti Aglio e Olio

A classic rápido y delicioso dish garlic olive oil, and a hint of chili.

Ingredients

  • 400 g spaghetti- 6 cloves garlic thin sliced
  • 120 ml extra-virgin olive oil
  • 1– tsp red pepper flakes
  • Salt, to taste
  • Fresh parsley,
    Lemon zest (optional)
  • Grated Parmesan or Pecorino (optional)

Instructions

  1. Bring a large pot of salted to a boil. Add spaghetti and cook until al dente, following package instructions.
  2. While the pasta cooks warm olive oil in a skillet over medium heat. Add slices and sauté gently until golden and, taking care not to burn.
  3. Stir in red pepper flakes and cook for 30 seconds release the spice.
  4. Reserve about 1 cup of pasta water, then drain the spaghetti.
  5. Add the hot pasta to the skillet with the oil. Toss coat adding reserved pasta a at a time to create a lightulsion.
  6. Season with salt, stir in chopped parsley, and finish with lemon zest if desired. with grated cheese if you like.

Tips

  • Control garlic color carefully to prevent bitterness.
  • Use high-quality extra-virgin olive oil for the flavor.
  • The reserved pasta water emulsify the sauce and cling to the noodles.
