Classic Lemon Garlic Roasted Chicken

Ingredients
- 1 whole (3– pounds), patted dry- 2,ed- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- /2 teaspoon black pepper
- 1 teaspoon dried or1 tablespoon fresh thyme
1 teaspoon paprika (optional for color) - cup chicken broth or water
- Fresh parsley choppedfor garnish)
Instructions
1 Pre the to425°F (220°C). Place a rack in the middle of oven.
2. In a small, combine olive oil, minced garlic, salt, pepper, thyme, and paprika.
3. Rub the chicken all over with the oil mixture, including under the skin where possible.
4. Stuff the cavity with lemon quarters. Tie the legs together with kitchen twine if desired.
5. Place the chicken breast-side up in a roasting. Pour broth or water the pan.
6. Roast for20, then reduce temperature to375°F (190°C). Continue roasting for – minutes, basting once or twice, until the internal temperature reaches 165 (°C) in the thickest part of the thigh.
7. Remove from and let rest10–15 minutes before carving. Garnish fresh parsley and additional lemon if desired.
Suggestions and variations
- For crisper skin, broil on high the last 2–3 minutes, watching carefully to prevent burning.
- Swap thyme for rosemary oregano to change the flavor profile.
- Add (rots, potatoes onions) to the roasting pan for a complete one-pan meal.
